Max Makowski's relationship with cocoa started at birth. His family owned a tiny plantation where as a young boy he would spend considerable time. As an adult his attention turned initially towards researching low-altitude plantations around the world.
Then he started into the study of manufacturing methodologies of milk chocolate. He has worked as a consultant for the Mandarin Oriental Hotel Group, Hong Kong and Shanghai Hotels, the HK Ritz-Carlton, and the Association of Chinese Chocolate Manufacturers.
Presently he is in charge of chocolate-making at Fair Oaks Farms, producers of Fairlife milk and Core Power, and through the Cape Cod Refinery Co. is designing industrial-size machinery for refining and conching.
