Amanda Jo “AJ” Wildey is an anthropologist and certified cacao and chocolate taster based in Lima, Peru. AJ has conducted fieldwork in different cacao growing regions throughout Peru and, in 2017, founded El Cacaotal, Peru’s first and only craft chocolate specialty shop. From El Cacaotal, she promotes both commercial and investigative projects that stimulate Peru’s fine cacao and chocolate value chains. AJ has also led tasting experiences in Chile and the US to draw more attention to Peru’s impressive craft chocolate scene.
