Meet Dr. Silke Elwers
The Impact of Real Traceability on Cocoa Quality
Biologist Dr. Silke Elwers started working with cocoa in 1998 at the University of Hamburg where she researched cocoa compounds relevant to flavour and quality. In 2008, she completed a PhD thesis on cocoa polyphenols and in 2010 she co-authored the "Cocoa Atlas", a reference work on international cocoa qualities. From 2009-2017 Silke worked as a senior consultant for cocoa at Forest Finance and Forliance GmbH, planning and operating large cocoa plantations and post-harvest stations in South and Central America.
From 2017-2023 she was responsible for cocoa sourcing and quality management at the chocolate manufacturer Lubeca, where she built up the company's own chocolate lab and was a trained member of the cocoa and chocolate sensory panel.
Since July 2023 Silke has been working at COOKO GmbH as VP for Product Integrity. Here she supports the development of the unique COOKO system for optimising the quality and traceability of cocoa during harvest and post-harvest processing.
